Well being from Pittsburgh the home of Heinz I can at least answer one of those. Heinz decided they wanted to change the name of catsup so they could make themselves stand out. For a very long time Heinz was the only one spelling it with a “K” but now there are a few companies who also spell it like that because the general thought nowadays is that catsup is bootleg ketchup, just like you said.
